Maybe this is what you're after...
Select the text. Press Command+B , which will break it apart. For each
letter, do the following : Select, press f8 to make a symbol, then Command+X
to cut. Create a new layer, then press Command+Shift+V to paste in place.
(This is a really good keyboard shortcut to know, I think : ) Do that for
each letter and you will have the original word with each letter on its own
layer.
