Try this:

Instead of putting a button containing a movie, put a movie containing a
button and a stop action in the first frame, and place it on the stage.

On the mouseover state of the button, have it go to and play frame 2.

It might need some tweeking, but it should work.

which was done with flash 5.. most of the stuff is basic, yet creative.

The one item that escapes me though is how they were able to make
mouse-overs play movie clips.

Hold on now, I know how to put movie clips in the OVER position of
a button, what I don't get is how you can make the movie clip play even
after the mouse is removed. Basically, how do I make a movie clip "play"
when I roll-over, but not stop when I roll-off?
