I'm not sure of the statistics so can only speak from personal experience.
Many Government Depts and Corporates operating LANs or WANs that I've dealt
with choose not to have the various plugins installed (supposedly for
security reasons - although I wouldn't want to debate this with the sys
admin ppl). The "day job" for me is with a quite large Gov't dept and we
don't even have JavaScript enabled. As you can imagine browsing at the
office isn't a lot of fun. Needless to say, we web developers either run for
our laptops and dial in outside the network environment or do our research
at home.

It really depends on the target audience I suppose ... and the assessment of
the risks involved in alienating a segment of the audience.
